Grilled Turkey Niçoise

This Grilled Turkey Niçoise with Dijon Thyme dressing is an uncommonly delicious take on the traditional that can be enjoyed any time of year.

Ingredients

1 cup Dijon Vinaigrette (recipe below or your favorite store bought), divided
1 lb. Plainville Farms® Turkey Cutlet
salt and pepper to taste
12 oz. new potatoes, wedged and blanched
8 oz. green beans, trimmed and blanched
8 oz. cherry tomatoes, halved
1/2 cup Niçoise, Kalamata or other black olives, pitted and halved
2 hard boiled eggs, wedged

Instructions

Pour 3/4 cup of vinaigrette into a sealable plastic bag. Place cutlets in bag and allow to marinate, refrigerated, for 30 minutes.

Remove turkey from marinade and season to taste with salt and pepper. Discard bags with excess marinade. Grill marinated cutlets over medium-high heat until cooked through, about 3-4 minutes per side. Transfer to a clean cutting board and slice turkey into strips. Place in a large mixing bowl. Add potatoes, green beans, cherry tomatoes and olives. Dress with remaining vinaigrette, season to taste with salt and pepper and gently toss in eggs. Serves 4.

Dijon Thyme Dressing

Ingredients

3/4 cup olive oil
1/4 cup red wine vinegar
2 tbsp. Dijon mustard
1 shallot, minced
2 tsp. chopped thyme
1/2 tsp. anchovy paste

Instructions

Whisk ingredients together until thoroughly mixed. Makes 1 cup.
