Slow Cooker Turkey Nachos

Perfect for sharing, these Slow Cooker Turkey Nachos are prepared with natural* slow cooked turkey for a sumptuous, savory flavor.

Ingredients

3 lbs. Plainville Farms® Turkey Thighs
1 1-1/4 oz. package taco seasoning mix
1 14-1/2 oz. can diced tomatoes, with juices
1 15-oz can pinto beans
1 4-1/2-oz can chopped green chilies
1 tsp. dried oregano
1/2 tsp. cumin
2 tbsp. fresh lime juice
white corn tortilla chips
1 cup shredded jalapeno cheese
1 cup red bell pepper, seeded and chopped fine
1/4 cup black olives, well drained
1/4 cup chopped green onions
2/3 cup sour cream
1/4 cup fresh cilantro sprigs
2/3 cup salsa
10 lime wedges, seeds removed

Instructions

Remove bone and skin from turkey thighs. Place thighs in a 3-1/2 to 4 quart slow cooker. Sprinkle with taco seasoning mix and cover with tomatoes, beans, chilies, oregano, cumin and lime juice. Set cooker on LOW and cover, cooking for 7 to 8 hours.

Remove turkey thighs from cooker and allow to cool slightly. Shred turkey into thin strips.

Mash bean, tomato, chili and herb mix. Return turkey to slow cooker with bean mix. Cook on low setting for up to 2 hours.

Place tortillas on large, oven-proof platter. Spoon turkey and bean mixture onto tortillas. Sprinkle each tortilla with cheese, red peppers, olives, and onions. Heat tortillas in preheated 425°F oven until cheese melts, about 5 minutes.

Serve with sour cream, cilantro, salsa, and lime. Serves 10.
